Ingredients:
- 1 ½ cup AP flour
- 1 cup whole wheat flour
- 1 t baking soda
- 2 teaspoon salt
- 2 sticks (16 Tablespoons) unsalted butter, softened
- 6 oz granulated sugar
- 6 oz Tablespoons light brown sugar
- 2 large eggs
- 2 teaspoons vanilla
- 2 very ripe bananas, mashed
- 1 ½ cup mocha flavored chips
Directions:
- In one bowl, whisk together the dry
ingredients
- In the bowl of a stand mixer, cream
the butter and then add the sugars
Next add the eggs, one at a time, and the vanilla.
- Add the flour mixture to the sugar
mixture by hand
- Mix in the banana and mocha chips
until just combined
- Wrap dough in plastic wrap and chill
in the refrigerator for 1 hour
- Preheat oven to 375 and line baking
sheets with parchment paper or silicone mats
- Drop by tablespoons onto the baking
sheet, spacing dough an inch apart
- Bake cookies for 8-10 minutes, until
lightly brown. Let them cool
slightly on the cookies sheets and then transfer to cooling rack.
